Papdi Raita

Ingredients
  1. Papdi (500gm)
  2. Potato(1 big)
  3. Mustard(2 spoon)
  4. Jirra(1/2 spoon)
  5. Tomato(1  big)
  6. Garlic(4 cloves)
  7. Red dry chilli(1)
  8. ½ spoon sugar
  9. Little turmeric powder
  10. Salt

Method of preparation:
  1. Clean the papdi.Cut the potato vertically small pieces
  2. Steam both papdi+potato in a cooker with pinch of turmeric powder and salt. Turn off the cooker after 1 whistle. Keep it aside.
  3. Make paste of mustard seeds + jirra + dry red chilli + garlic.
  4. Make tomato puree   and keep it aside.
  5. Take 1 spoon of oil .Put little mustard .When it crackles add the mustard paste +pinch of turmeric powder + salt+ tomato puree.
  6. Add some water. Let the mixture to boil for 5 to 10 minutes.
  7. When it is done properly, add the papdi+ potato+ pinch of sugar and let it boil for some time.
  8. Serve hot with rice.

karela pura gotta bhaja


Ingredients:

·         5 tender karela/bitter gourd
·         Two big onions(cut into small pieces)
·         ¼ tsp turmeric powder/haldi
·         ½ tsp red chili powder/lal mirch powder
·         ½ tsp cumin powder/jeera
·         1/4 Lemon
·         1 tsp coriander powder/dhania powder
·         2 or 3 big spoon   Mustard seed
·         2 tbsp oil
·         salt as required

 Preparations:

1.     Wash the karelas in running water.
2.     Steam the karelas in a karai with salt and turmeric powder so that it will be soft.
3.     Scoop out the insides carefully creating a hollow in the centre.
4.     Take 2 to 3 spoons of oil in a karai.Put the chopped onion.
5.     When roasted properly, put the mustard+jirra+red chilli+dhania paste.
6.     When it is done, take it out and squeeze 1/4  lemon with the paste.
7.     Stuff the karelas with the mixer and roast thosein a towa with little oil with slow flame.
8.     You can serve with rice and roti.

palak dal





Ingredients: 

1 cup Tur dal/1 cup Moong dal
1 bunch fresh spinach -washed-chopped roughly

1 tbsp- garlic finely chopped
1 big onion-finely chopped
1 big sized tomato-finely chopped
1/2 tbsp cumin seeds (jeera)
1/4 tsp turmeric 

1 tsp red chilli powder
1 tbsp oil
1 big potato
Salt to taste
Method of Preparation:

1. Pressure cook ( or boil ) the dals+ tomato+potato till soft with  salt and turmeric powder.

2. In a pan, heat oil. Add the cumin seeds, once they start popping, add garlic and onions. Fry till onions turn golden brown. Add spinach, turmeric, red chilli powder, salt  . Saute the above mixture till it turns soft and golden.

3.Add the boiled dal and mashed potato mix to the above . Mix well, remove from flame. Garnish with fresh coriander leaves.

4. Serve hot with rice or rotis. 

Note: You can take 1/2 cup Tur dal + 1/2 cup Moong dal or only any dal  .

Gotta bigan bhaja







Ingredients:

  1. 4 brinjals
  2. 1 big tomato  (very small cuts)
  3. 2 big onions(very  small cuts)
  4.  Pea nuts.(saute and  half grind )
  5. salt,turmeric powder,chilli powder , garam masala,


Preparation

Give four side top cut to the  brinjals . put little salt over them and keep aside for soaking.
Then prepare the stuffing with all the above ingredients.
After 5 mins  stuff those mixture inside each brinjal.
Take 4 spoons of oil in a karai. Put those stuffed brinjals inside and cover it for 10 mins in very slow flame.
When it is done you can serve with rice or roti.
